Kale Soup

This Kale soup is another great recipe from the 2008 Owen Sound Farmers Market Harvest Bowl Soup Supper.  This one comes from Arwen Greenwood from About Books.

Ingredients:

  • 1 lb kale
  • 1 lb potatoes
  • 1 lb fresh spicy sausages
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 cup chopped onions
  • 1/2 cup chopped carrots
  • 2 or 3 garlic, chopped
  • 2 qts chicken broth
  • 3 lbs tomatoes
  • 1 1/2 cups cooked kidney beans (white)
  • 1 tbsp soy sauce or tamari

Instructions:

  1. In a large (min 5 qts, 6 is better) pot, saute onions, carrots and garlic in olive oil and butter until softened.
  2. Add potatoes and chicken broth.  Simmer until potatoes are soft.
  3. Mash or puree vegetables and return to pot.  Stir in peeled and chopped tomatoes and beans.  Cook 10 to 15 minutes.
  4. Strip and chop kale leaves and add together with sausage which has been previously pricked and blanched and chopped into bite-sized pieces, and soy sauce.
  5. Cook another 5 to 10 minutes and correct seasoning.
