Kale Soup

This Kale soup is another great recipe from the 2008 Owen Sound Farmers Market Harvest Bowl Soup Supper. This one comes from Arwen Greenwood from About Books.
Ingredients:
- 1 lb kale
- 1 lb potatoes
- 1 lb fresh spicy sausages
- 2 tbsp olive oil
- 2 tbsp butter
- 1 cup chopped onions
- 1/2 cup chopped carrots
- 2 or 3 garlic, chopped
- 2 qts chicken broth
- 3 lbs tomatoes
- 1 1/2 cups cooked kidney beans (white)
- 1 tbsp soy sauce or tamari
Instructions:
- In a large (min 5 qts, 6 is better) pot, saute onions, carrots and garlic in olive oil and butter until softened.
- Add potatoes and chicken broth. Simmer until potatoes are soft.
- Mash or puree vegetables and return to pot. Stir in peeled and chopped tomatoes and beans. Cook 10 to 15 minutes.
- Strip and chop kale leaves and add together with sausage which has been previously pricked and blanched and chopped into bite-sized pieces, and soy sauce.
- Cook another 5 to 10 minutes and correct seasoning.
